Piedmont King Risotto with Baby Bellas

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced or pressed
  • 8 ounces Baby Bella mushrooms, sliced
  • 1 cup Arborio rice
  • 1 cup Water 2 Wine Piedmont King
  • 2-½ cups hot chicken or vegetable broth
  • ½ cup Parmigiano Reggiano or Parmesan cheese, plus more for garnish
  • 2 Tablespoons cold butter, cut into small pieces
  • Salt and fresh black pepper to taste
  1. Heat olive oil in large saucepan or dutch oven. Add garlic and sauté until translucent. Add mushrooms and rice. Sauté until mushrooms soften and rice turns golden.
  2. Add ½ cup wine and cook, stirring often, until liquid is absorbed, about 5 minutes. Repeat with other ½ cup wine. Add broth, ½ cup at a time, stirring often, until all broth is absorbed.
  3. Remove from heat and stir in butter, then cheese. Season to taste and garnish with extra cheese.
